Did you see the supermoon Sunday evening? I was a little disappointed as it wasn't what I had expected. It was said to be the most spectacular of five supermoons this year. It was larger than usual (though not brighter) which occurs when a full moon reaches the point of its orbit closet to earth, and it appears to be larger because of an optical illusion. Very interesting.
The Lincoln Kitchen Band had been invited to perform at the Fayetteville farmers' market but they learned that no electrical appliances are allowed there, and without their leading music, no performance. So, the regular fun time was enjoyed instead at the center, as usual.
Around 20 attended the Tuesday evening reminiscing session in the Lincoln Library, viewing videotapes of Lincoln and surrounding communities, spending some time discussing the life of Jessie James, as his sister had lived in the area for a few years and he had visited. A picture of her house in Clyde was one of those shown. Everyone who has different views and remembrances of old-time Lincoln is asked to come Tuesday and share, for the planned final session.
Gardening with extra eggplants?
Eggplant Casserole
1 eggplant, pared and sliced
1/4 c butter
14 c chopped onion
1/4 c chopped green pepper
1 c drained tomatoes
1 c crumbed cornbread
2 eggs, beaten
Salt and pepper to taste
Dash of Worcestershire sauce
1 c grated cheese
1/2 c evaporated milk.
Boil eggplant in water until tender. Drain. Add next eight ingredients. Mix well. Place in casserole. Cover with cheese, pour milk over all. Bake 45-60 minutes at 325 degrees. Squash may be substituted, I use gluten free cornbread for a gluten free dish.
