Lincoln Alumni Reunion Coming Up

Some weeks ago, when a group met to plan the revival of the once flourishing Lincoln Alumni reunion, the date suggested seemed so far in the future, the middle of summer! But to prove how time files, that date is suddenly upon us, this Saturday, July 25, from 2 to 4 p.m. in the Community Building on the square.

The reunion was started in 1964, with over 200 attending the first meeting, and continued, every two years until a few years ago. It is now hoped that enough interest will be shown that the reunion can be started again with dinner, as before.

Some interest has been shown, in again holding the "remember and reminisce" meeting in the Library, The first is planned for Thursday, Aug. 6. Lincoln has lots of history, and all who "remember" are asked to attend and share.

Baked Zucchini Fries

Cut 2 medium zucchini into 1/2 inch thick spears. Put on wire rack, sprinkle with salt, and let sit for 20 minutes then blot with paper towel.

Beat 2 eggs in bowl. Mix 3 table spoons dry bread crumb, 2 table spoons finely-grated Parmesan cheese and 1 tea spoon thyme in a zip-top bag. Dip spears in egg then place in bag and shake to coat well. Place in single layer on grease baking sheet and bake at 425 degrees F., turning once, until golden brown, about 12-18 minutes.

Notice these are baked not fried.
