Gardens Produce Bountiful Harvest

This has been a bountiful year. I've had so many offers of garden produce. "Do you need some okra?" Can you use some squash?" and I've had to turn down so much because my family has brought me more than I can use. Janet, a sack full of squash, cucumbers and tomatoes, Misty brought a small basket full of the juiciest, sweetest, tree-ripened peaches, then a sack of squash. Brian came last week with a huge sack of tree-ripened apples. (I hope to make them into apple butter, which he likes.)

Some humor. When I started to make a casserole from the squash Janet gave me, I had every thing laid out for my favorite, the carrots to be grated while the squash and onions stewed, the pimientos, tomato, and seasonings. I had cut up the yellow squash and had most of the "zucchini" cut up when I notice that was not zucchini, and took a little bite, yes, cucumbers! Not wanting to waste them, I decided they would substitute for squash, and you know, it turned out great. Some of my recipes for squash and eggplant suggest substituting one for the other. Now, in one of my "Senior Moments," I found that cucumbers may be substituted for others, as well.

Some Kitchen Band members thought the band started again the first of September, but it was, instead, the first of August, with as much fun as usual. They plan to be "performing" for the upcoming Hee Haw show in the Lincoln Center, on Sept. 24. More on this later.
